Here is a nice starter recipe. The traditional recipe was a bit modified, as you see. You can serve it with blini or a fresh baguette. It’s easy to do, but it will taste better if you wait for a while before serving it.
Use FRESH goat’s cheese, not regular goat’s cheese, otherwise it will be too strong!!
Ingredients (for 4 people)
300 g Greek yoghurt
150 g fresh goat's cheese
1 garlic clove
Peel the cucumber, remove the seeds, cut in small dices. Put some salt and let rest for at least 15-20 min to remove the excess of water.
Crush the garlic, chop the mint. In a salad bowl, bring together the goat’s cheese and the yoghurt, and then add the rest of the ingredients. Add some lemon juice, salt and pepper. Let rest for at least an hour in the fridge before serving.
