I had already told you about the "inavouables", the food diversion recipes, where you cook traditional dishes with a "weird" ingredient. Last time I had used Curly. This time, it will be orange juice. Try it, it's nice and everybody will ask for your secret!
It's convenient when you have guests: once the vegetables are cut in dices, the tajine can simmer by itself; you don't need to check it all the time.
Ingredients (for 6 people)
1 chicken (or 4 legs)
1 soup spoon thyme
6 small potatoes
1 litre orange juice
Chop the onion, cut the carrots in slices and the potatoes in dices.
In a casserole dish, brown the chicken in some oil, then add the onions and the orange juice. Make it boil, add the vegetables and let it simmer for 40 min.
Serve as it or with semolina.
