My aunt gave me a round courgette that I decided to stuff.
It smelled really good! The pinch of cinnamon really enhances the taste of the courgette. I found that the hedgehog aspect (totally unexpected) was quite funny too!!!!
Ingredients (for 1 courgette)
1 round courgette
100 g minced meat
100 g rice
1 teaspoon cinnamon
Cut the top of the courgette and empty it with a teaspoon. Cut the inside in small dices and bring together with the meat, the rice, half the chopped onion, salt, pepper and cinnamon. Stuff the courgette with it and make meat balls with the rest. Put the top of the courgette back.
In a casserole dish, brown the rest of the onion, add a glass of water, coriander, salt, pepper and some cinnamon. Put the courgette in the casserole dish, cook for 45 min (check from time to time if it doesn’t burn, if necessary pour some more water).
