In summer,
it is good to know some fresh salads. Here is a suggestion that comes from
India. It is delicious and fresh, perfect.
You can
serve it in verrines so that it is nicer. Let the salad rest for one hour in
the fridge before serving.
Ingredients
(for 6 verrines)
500 g
fromage blanc (or yoghurts.
250 g
cucumber
80 g raisins
1 carrot
6 soup
spoons fresh mint
1 lime
1 soup
spoon curry
Preparation
In a salad
bowl, bring together the fromage blanc and the raisins. Add salt and pepper. Store
in the fridge while preparing the rest of the dish.
Peel the
cucumber and grate it (absorb the water with some kitchen paper). Grate the
carrot. Press the lemon. Add these ingredients and the curry to the fromage
blanc. If necessary, add salt and pepper. Stir well, cover and let rest for one
hour in the fridge.
When you
serve it, add the mint and stir.
Pour in
verrines and serve chilled.
