You are going to tell me, come on, puree? That’s an easy one. But the easiest recipe can turn out to be a disaster if you do it wrong (I can tell you. I underestimated the puree once. Only once. Shame on me.) But this one was really delicious.
Once you have eaten homemade puree, it is so good that you can’t eat powder puree!!!
Puree is a last minute dish, it doesn’t like to wait.
I did it with mince meat with shallots.
Ingredients (for 4 people)
1-2 potatoes per person (depending on the size, and of course I mean the size of the potato)
100 g butter
10 cl warm milk
1 pinch of nutmeg
Boil the potatoes for about 25-30 min. Boil them with the skin, otherwise they will soak with water.
Peel and crush the potatoes with a fork .Add little by little the warm milk and the butter. Stir with the fork to obtain a homogeneous mixture. Do NOT pour the whole milk at once, otherwise, if your puree gets too liquid, it will be hard to repair the mistake.
When the puree has the right consistency, add nutmeg, salt and pepper..
