First let me tell you that, as it is the translation of a French blog, I use the metric system for my measurements and all the temperatures are given in Celsius !

New category: I tasted it for you. The idea is to pick up random products that are unknow to me, to taste them, cook them, describe them and give my opinion on them.

Muffins with coconut flavour


If you are looking for a desert, this one is amazing ! The coconut really gives a special flavour. And there is no butter, so they are lighter. Yummy! It tastes a bit like yoghurt cake. It is my favourite muffin recipe.

Ingredients (for 12 muffins)
4 eggs
300 g brown sugar
300 g flour
1 sachet dried yeast
12 cl coconut milk
10 cl sunflower oil
Flaked almonds
1 pinch of salt

Pre-heat the oven at 180°C.
Beat the eggs with the sugar. Add the flour, the dried yeast, salt, the coconut milk, and then the oil. Stir until the mixture is homogeneous.
Pour in muffin moulds, sprinkle with flaked almonds and bake for 25 min. Wait for a few minutes before unmolding.

The accident I was very proud of: as I had too much mixture for my muffins, I put the rest in my madeleine moulds. Tadada!! I succeeded to make one with a perfect shape! After so much failed trials... The trouble is I don't know how I made it, so I can't repeat it :)
