I had a barbecue with colleagues, so I wondered what to prepare... I wanted something fresh. This taboulé was perfect, it is easy to do and you can (must) prepare it in advance, no last minute stress. It's also easy to transport.
Really, prepare it in advance. If you eat it immediately, you will find it tastes nothing. Pointless. On the contrary, if you store it in the fridge for some hour, or, ideally, a whole night, while stirring it from time to time, the flavour will really develop itself. It's much better!
You can prepare it with semolina or with bulgur, depending on what you can find. I prefer it with bulgur (but as you can see on the picture, I sometimes use semolina, too).
250 g semolina
250 g tomatoes
1 large onion
12 mint leaves
4 soup spoons olive oil
Put the raisins in a bowl of water.
In a bowl, place the semolina, cover with water and let it rest for about 15 min. Stir with a fork. [If you use bulgur, you must cook it in boiling water for about 15 min.]
Chop the onions and cut the tomatoes in dices. Chop the mint.
In a salad bowl, bring together the oil, the lemon juice, salt and pepper. Add the vegetables. Add the semolina and stir well. Place in the fridge for some hours or a nice, stir from time to time.
