Ingredients (for 4-5 people)
250 g strawberries
125 g sugar
145 g icing sugar
4 egg whites
20 cl liquid cream
10 g butter and 10 g flour for the baking plate.
Pre-heat the oven at 110°C.
Meringue: beat the egg whites until they are stiff, then add the sugar little by little and beat for 10 min. When the mixture is firm, pour gently 125 g icing sugar and don't beat too much.
On a piece of baking paper, draw a 26 cm diameter circle. Butter it and place it on a baking plate. Put the meringue and give it the shape of a ring 4 cm thick. Put in the oven and bake for 1:45. The meringue is ready when the bottom is as dry as the top. Let it cool down before serving.

Meanwhile, wash the strawberries. Peel the mango and slice it. Beat the cream to make a Chantilly cream and add 20g icing sugar. Beat again. Place the Chantilly cream in the center of the meringue (the hole of the ring), put the fruits and serve immediately.
(On the picture, you see no strawberries but a peach and a mango.)
