With this recipe I tried a new kind of pasta: mafaldine. I really liked their shape which is quite original!
Long pasta is perfect to prepare with vegetables, but you need to cut them in small dices.
You can make the tapenade yourself, click here to find the recipe! I served this with a roasted chicken, but you can serve this dish by itself.
Ingredients (for 4 people)
Mafaldine pasta (50 g per person if you serve the pasta with meat, 100 g if you serve them alone). You can replace them with tagliatelles.
1 bell pepper
100 g tapenade
Cut the vegetables in dices. Brown them in a sauté pan for 15 min in some olive oil, add salt, pepper and thyme. Stir regularly.
Meanwhile, cook the pasta.
Pour the vegetable in a salad bowl, add the pasta, stir well and pour some tapenade and stir again. Serve immediately.
