I tried to make a tiramisu in a circle cookie cutter. Result: it’s more convenient to use verrines, because the tiramisu won’t fall apart.
I have already tried several recipes of tiramisu but this time, the flavour will be lemon.
For this recipe, you will need a basic recipe: the lemon curd. Recipe here.
It must rest for 4 hours in the fridge.
Ingredients (for 6 people)
250 g mascarpone
170 g sugar
20 ladyfinger cookies
6 soup spoons (300 g) lemon curd
10 cl limoncello
Prepare the lemon curd.
In a bowl, bring together 1 soup spoon sugar, the limoncello and 5 cl water.
In a salad bowl, beat the rest of the sugar with the egg yolks until the mixture gets white. Add the mascarpone, beat until the mixture is homogeneous. Add the lemon curd and the lemon zests.
Beat the egg whites until they are stiff.
Soak the ladyfinger cookies in the limoncello. Put half the biscuits in the verrines, add the lemon curd-mascarpone mixture and then a second layer of cookies and lemon curd-mascarpone mixture.
Leave for 4 hours in the fridge before serving.
