Once you can do crêpes and pancakes, it’s not hard to prepare the Russian cousin. It’s a nice way to serve salads, for example, for an aperitif.
This is a salted recipe, so if you want to have sweet blini, add 1 or 2 soup spoons sugar.
As for the thickness of the blini: in France, they are very thick (like pancakes), but a Russian friend explained to me that they are supposed to be as thin as the French crêpes.
Ingredients (for about 10 blini)
1 glass flour
1.5 glass milk
1 egg + 1 egg yolk
5 cl sunflower oil
1 generous pinch of salt
Bring together the flour and the salt, then the milk and the oil. Beat until you have a homogeneous mixture. Fry thin crêpes.
For sweet blini, add 1 or 2 soup spoons sugar.
