Here is a recipe from Asia, with a tasty sauce.
Ingredients (for 2-3 people)
300 g chicken meat
1 litre stock
210 g ginger
2 soup spoons rice vinegar
2 soup spoons sugar
3 soup spoons sesame oil
For the leek: take 30 g for the sauce and cut 50g in small slices. Cut the chicken in dices and grate 200 g ginger.
Boil the stock; pour the 50 g leek, the ginger and the chicken. Let simmer for 20 min, add salt if necessary.
Meanwhile, slice the cucumber. Chop the 30 g leek and grate the rest of the ginger.
In a bowl, bring together the sesame oil, the vinegar, the soya sauce, the sugar, the grated ginger and the 30 g leek. Stir well.
Serve the chicken with the leek the cucumber and the sauce.
